About Me

Hello! I’m Nichole, a registered dietitian and home cook/baker. While I love healthy foods, I also believe in all foods in moderation. Baking is something I truly enjoy as a stress-reliever and if I’m going to indulge in a sweet treat, there’s nothing better than a home cooked dessert. 

I have had the opportunity to teach cooking classes for families and individuals and I know how scary it can feel. Here on Nichole’s Cookbook you’ll find recipes that I have tested thoroughly so you know that they’ll work. My recipes should be clear and easy to follow so you can make them regardless of your skill level. 

My mom has always made delicious, from-scratch desserts and meals and I have loved being in the kitchen since I was young. Most of my mom’s recipes are in a large binder where she has compiled all of her favorite recipes. When I went to college, she gave me my own copy of her recipe book and it has been my go-to cookbook ever since. I was inspired by this cookbook when starting my blog as it is full of recipes that have many happy memories connected to them. I hope others can make their own happy memories when making my recipes.

How many times do you go to a recipe online and have to scroll and scroll just to find the recipe? “I just want the recipe, not your life story!” you yell at your screen. I pride myself on minimizing the amount of text you have to scroll through to get to the recipe you’re looking for. However, I do try to provide some helpful tips or interesting facts following my recipes to help you become a better cook or baker.
